Dear beautiful beings of light
The chocolate brownie recipe we ate on Saturday came from a wonderful cook book called Honestly Healthy I altered it a bit to make it vegan: this is for 8 big brownies
125g rice flour (sometimes I use spelt)
75g cocoa powder or raw cacao… I add to taste rather than measuring
1/4 tsp baking powder
175g mashed cooked sweet potato
250g date syrup (if I run out half way I add honey/maple/agave to make up the full amount. But date is the best)
175g vegan butter or oil (I use coconut or rape seed or sunflower oil)
1 egg – I use our own eggs or replace with a vegan egg – 1tbsp ground flax or chia with 3 tbsp water. Leave for 10 mins to become egg like in consistency
1/4 tsp vanilla extract.
Mix altogether and bake in a tray at 180c for 20/25 minutes.
